Nshima Lessons

This past week, I had the joy of learning to make nshima, the staple food of Zambia.  Why it took me so long to get lessons, who knows.  But I did it!  And let me say, it’s much more complicated than you might think.  So step by step, I used some mealie mealie to prepare our lunch!  I got specific instructions on how much mealie mealie to add, and when, and how to stir.  As there are different steps to making this food, there are also specific ways to stir.  And as a white woman, I’m “weak” and therefore, by the time I was done, my arms were extremely tired.  But it tasted great!  (Thanks to my teacher who saved the day.  My nshima would have turned out pretty poorly I’m afraid.)  Nshima, culimbra, and dried fish.  Yum!
